Professor Luc De Vuyst aan de Vrije Universiteit Brussel is een expert in het domein van de industriële microbiologie. Samen met zijn medewerkers Andrea Comasio en Simon Van Kerrebroeck maakten ze voor Ferment een desem met de unieke Brusselse gist. Naar oude traditie begonnen ze met Lambiek-bier, dat ze in gelijke delen mengden met bloem en water.
